Historically, buffet systems originate in the mid-16th century from the Brannvinsbord, a type of Swedish schnapps table, a table of shots of alcoholic beverages. It was during the expansion of railroads in Europe did a smorgasbord buffet increase in popularity. In 1939, at the New York World’s Fair exhibition, the Swedes people had put forward a display of smorgasbord. They had laden the table with the best Swedish foods, hence grabbing a lot of attention. During the late 20th century, Swedes had introduced this system in New York and in the English speaking world it came to be known as “buffet”.
