Why National Cabbage Day?
The day is to explore more about the health benefits of Cabbage and to enjoy with different cabbage recipes. Being a vegetable with great nutritional value, the use of cabbage is dated back to 1000 BC. It is a staple food of European and Indian cuisine. The variant recipes of cabbage are cabbage pickles, cabbage sautés, cabbage stews, etc. It is a great source of Vitamins and dietary fiber. Cabbage comprises of 44 percent of Vitamin C and 72 percent of Vitamin K along with smaller proportions of Vitamin B6 and Folate. While writing this article, am thinking how many times I had these recipes, I think only twice in my lifetime. We need to make use of what the nature has provided us appropriately. So, never forget to add cabbage in your food list at least once in a week.

Cabbage Saute:
This dish is a daily routine (at least weekly once) food in most of the Asian countries.
Very easy to cook.
Ingredients:
Two medium-sized onions
250 grams cabbage (finely chopped)
Two Green chillies (U can substitute it with black pepper) Mustard-one teaspoon (optional)
A handful of parsley
Cashew nuts (A handful of)
Pre-preparation (Cutting/Chopping):
Step 1: Chop the onion finely and keep it aside.
Step 2: cut the Green chillies vertically
Step 3: Take a cooker, add the finely chopped cabbage, add
10 teaspoons of water. The water seems to be not adequate, but during the boiling process, the water content present in the cabbage will be collided with the supplied (added) water making it quite enough. Leave for up to 10 minutes or you can leave up to 1 whistle (Do not pour more than the defined amount since overcooked cabbage could easily be smashed even if gently stirred, if so, it will be a super disaster).
Preparation Method:
Step 1: First, pour some vegetable oil in a saucepan and fry the cashew nuts, keep it aside.
Step 2: Take a saucepan, add edible oil, Add mustard. Leave
until the mustard pops up.
Step 3: Add green chillies, fry it until it turns its normal color so that the bitterness get extracted and blends with the oil. You can use black pepper instead.
Step 3: Add chopped onion, fry it until it turns golden brown.
Step 4: Add the boiled cabbage. Sauté it occasionally, Do not beat or swirl it (it may get smashed).
Step 5: Garnish with parsley and fried cashew nuts. It will be good if spread over pizza and it can be added as one of the stuffs in burger.
Garlic can also be added along with green chillies/black pepper. Crush the Garlic cloves before adding it.

White Cabbage belongs to the group called “Capitata Group”. The other group cultivars are Red Cabbage and Savoy Cabbage.
Cabbage head ranges from half to four kilograms and can be of white, green or purple in color. It is a multilayer vegetable and available mainly in summer times.
In accordance with the Food and Agriculture Organization of the United Nations, as of 2014, China is the largest producer of Cabbage contributing 47 percent of the World’s total production followed by India and European Union with 9 and 5.3 percent respectively.
